Gosia Cooks: Apple pie with shortcrust pastry
Few people are indifferent to this cake. Something like this – just lick your fingers!
Ingredients for shortcrust pastry:
- 500 g of coarse flour
- 200 g of cold butter
- 1 cup of sugar
- 8 g of vanilla sugar
- 2 eggs
- 1 teaspoon of baking powder
- 1.5-2 kg of apples
- 3 tablespoons of sugar
- 2 teaspoons of cinnamon
+ powdered sugar
We start with the preparation of shortcrust pastry. Sift the flour with baking powder on the pastry board, put the cold, diced butter on it.
Chop the whole thing with a knife. Add eggs, sugar and vanilla sugar. Knead everything quickly into a uniform dough.
Divide the dough in half, form balls, wrap it with cling film and put it in the fridge for 1 hour.
Peel the apples and cut them into small cubes. Put them in a saucepan, add sugar and cinnamon. Stew the apples until the apples are tender, but not overcooked and still have the shape of cubes.
Line the baking tray with baking paper. Take one portion of the dough out of the refrigerator and roll it into a cake between two sheets of paper.
Line the bottom of the springform pan with dough, prick it with a fork and bake it for 12-15 minutes in an oven preheated to 180 ° C.
Put the prepared apples and another piece of shortcrust on top of the slightly toasted dough.
Bake for about 40-45 minutes.
Sprinkle the cooled cake with powdered sugar.
