Gosia Cooks: Yoghurt donuts

A recipe just in time for the upcoming Fat Thursday:
Yoghurt donuts
Ingredients:
- 250 ml of natural Greek yoghurt
- 3 eggs
- 2 tablespoons of powdered sugar
- 1 teaspoon of baking powder
- 1 teaspoon of natural vanilla extract
- 300 g of cake flour
Additionally:
- 1 liter of rapeseed oil – for frying
- powdered sugar for sprinkling.
How to do it:
- Put all the ingredients in a bowl and use a kitchen mixer to knead until a uniform, smooth dough is obtained.
- Heat the oil in a pot. Dip a spoon in hot oil, scoop a portion of the dough and translate it into hot oil (I use a metal ice cream scoop, but you can do it with two spoons). During frying, the donuts turn themselves and grill evenly on all sides. Fry the donuts in batches, put in a few, pick out the baked ones and put in another portion.
- The temperature of the oil cannot be too high, because the donuts will be cared for quickly from the outside, and the inside will remain raw. It cannot be too low either, because the donuts will lie on the bottom and soak up the oil. It’s best to check the temperature on one donut. The dough put in the oil should flow out immediately and start to fry, turning it on its own, then the oil temperature is right.
- Fish out the fried donuts with a slotted spoon and place them on a kitchen towel to drain the excess fat. Before serving, sprinkle with powdered sugar.
