Gosia Cooks: Horseradish Cream with salmon and pistachios

Some people cannot imagine Easter without sour soup, others without borscht, and we are brave enough to offer you something even better: Horseradish Cream with salmon and pistachios. The best thing ever!

Ingredients:

  • 0.5 l of broth
  • 2 tablespoons of clarified butter
  • 1 leek
  • 1 onion
  • 4 potatoes
  • 200ml of cream 30%
  • 100g of horseradish
  • 4 slices of smoked salmon
  • a handful of chopped pistachios
  • a bunch of dill

Spices: salt, pepper, lemon juice



Tips:

Peel the vegetables and cut them.

Melt the butter in a pot, add the vegetables and fry over medium heat for a few minutes, being careful not to get brown.

Pour the broth and cook until the vegetables are tender.

Mix until cream.

Mix the cream with horseradish and pour it into the soup.

Season the cream with salt, pepper and lemon juice.

We serve the soup in bowls decorated with slices of smoked salmon, chopped pistachios and dill.
