Gosia’s Cooking: Rose Muffins
Pink October is almost over, but that doesn’t mean we should stop talking about the fight against breast cancer. Remember about regular mammography – and after the visit, enjoy rose cupcakes from our Gosia’s recipe. 👩🍳
Cupcake dough:
- 2 eggs
- 150 g of powdered sugar
- 110 g of butter
- 80 ml of milk
- 20 ml of drinking rose water
- 180 g of wheat flour
- 1 teaspoon of baking powder
Cream:
- 250 g mascarpone cheese
- 200 g cream 30%
- 2 tsp powdered sugar
- 2 tbsp rose syrup
- 2 tbsp jam / rose marmalade
Tips:
Melt the butter and set aside to cool. Put eggs, powdered sugar in the bowl of the mixer and start whipping. Then add the ingredients in the following order: milk, rose water, melted butter, flour and baking powder.
Line the muffin form with muffins. Preheat the oven to 180 ° C with hot air. Fill the curlers with dough to 2/3 of their height and bake for about 20-25 minutes. After cooling down, fill the cupcakes with jam or rose marmalade using a long-tipped needle.
Beat the mascarpone cheese with the cream until stiff. Add powdered sugar, rose syrup, jam and mix everything until smooth. Put the cream in a confectionery bag with a star-shaped tip and squeeze the cupcakes on top.
