Gosia Gotuje: Cold cucumber soup with tortilla chips

A refreshing cucumber and kefir soup, perfect for a delicious and simple meal in the middle of summer. Try it with homemade tortilla chips.


INGREDIENTS:

  • 300 g of fresh cucumbers
  • 1/2 bunch of radishes
  • 2 cloves of garlic
  • 600 ml of natural yogurt or kefir
  • fresh dill, chives
  • salt pepper

Additionally: tortilla pancakes


Tips:

Wash the cucumbers and radishes. Peel the cucumbers. Grate the vegetables on coarse meshes. Add salt, pepper and garlic squeezed through the press.

Pour over with yogurt or kefir. Finally, add the finely chopped chives and dill.

Mix everything and put it in the fridge to cool.

Tortilla chips: Brush the tortilla pancakes with olive oil and sprinkle them with your favorite spice, e.g. sweet pepper or oregano.

Then cut into triangles (like a pizza) and place them on a large baking tray. Bake for about 10 minutes in an oven preheated to 180 ° C.

Stir the cold cold soup once more and check its taste. If necessary, add more salt, pepper. Pour the cold soup into bowls and decorate.

Serve with homemade tortilla chips.
