Gosia Cooks: Tomato salad with croutons and pesto sauce

Perfect for a barbecue, full of flavor Mediterranean salad: tomato with croutons and pesto sauce.

Ingredients:

  • 1 baguette
  • 2 tablespoons of olive oil
  • 4 diced tomatoes
  • 1 red onion
  • 100 g of feta cheese
  • basil leaves

Sauce:

  • 4 tablespoons of olive oil
  • 1 red chili (finely chopped)
  • 2 tbsp red pesto
  • 2 tablespoons of red wine vinegar
  • salt pepper


Tips:

Cut the baguette into cubes, spread it on a baking sheet and sprinkle with olive oil. Bake in the oven at 230 ° C. When the toasts will turn golden, take them out and set aside to cool.

During this time, we prepare the sauce. Heat the olive oil in a frying pan and fry the thinly sliced red chili, about 1 minute, until soft, but not overcooked. Take the pan off the heat and let it cool down. Then add the pesto, vinegar and stir vigorously with a fork. We add spices to taste.

Combine in a large bowl: diced tomatoes, sliced onions, crushed feta cheese and croutons. Sprinkle with basil. Pour the sauce over it, gently mix it and serve.
