Gosia Cooks: Stuffed eggs with avocado
Stuffed eggs with avocado are a tasty alternative to classic stuffing. Surprise your guests!
INGREDIENTS:
- 5 eggs
- 1 ripe avocado
- 1 tablespoon of mayonnaise
- 1 tablespoon of lemon juice
- 1 tomato
- a piece of chili pepper
- 1 clove of garlic
- chopped cilantro and chives
- salt, pepper
Tips
Hard boil the eggs and cover them with cold water. Peel the shells, cut them in half lengthwise, remove the yolks and place them in a bowl. Mash with a fork, add mayonnaise.
Cut the avocado in half lengthwise, remove the pit, scoop out the flesh with a spoon and mash with a fork. Sprinkle with lemon juice and add to the yolks.
Pour boiling water over the tomato, peel it, remove the seeds, drain the juice and use only the flesh, which is cut into small cubes. Add to the paste and mix gently. At the end, add the garlic squeezed through the press, chopped chili, coriander, chives and season with salt and pepper.
Fill the egg whites with the stuffing, decorate with greens and finely chopped chili pepper.
