Gosia Cooks: Strawberries in cream!

The end of the strawberry season should be put to good use. That is why we recommend another recipe for strawberry cake from our Gosia. In a slightly different version than you imagine when you hear the slogan: Strawberries in cream! 🍓

Cake:

  • 2 eggs
  • 50 g of butter
  • 1/2 cup of sugar
  • 1/2 cup of buttermilk
  • 3/4 cup of flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract

Cream mass:

  • 300 ml of cream 30%
  • 250 ml of mascarpone cheese
  • 3 tablespoons of powdered sugar

Strawberry mass:

  • 600 g of strawberries
  • 2 strawberry jelly


Tips:

We start with the preparation of a buttermilk dough. Cream the butter, sugar and eggs until fluffy. Add buttermilk, flour and baking powder.

Put the dough into a round springform pan lined with baking paper and bake it for about 25 minutes at 180 ° C.

Let the dough cool down completely.

Whip the cream with powdered sugar until a stiff mass, at the end of churning, add the mascarpone cheese.

Put the cream mass on the cold bottom and put it in the fridge.

Dissolve jellies in 1.5 cups of hot water and cool them down. Blend the strawberries into a smooth mousse. Combine cold jellies with strawberries and when the mass starts to harden, pour it over the cream.

Put the cake in the fridge overnight.
