Gosia Cooks: Gingerbread pancakes with plum curd
INGREDIENTS:
- 1/2 cup sparkling water
- 1/2 cup milk
- 1 glass of wheat flour
- 3 eggs
- 1 spoon of cocoa
- 1 teaspoon gingerbread spice
- 50 g melted butter
- 250 g semi-skimmed cottage cheese
- 5 tbsp plum jam
- 100 ml 36% cream
- 1 teaspoon icing sugar
- fruit e.g. tinned peaches, kiwi, pomegranate
Tips
Whisk the flour with the eggs, milk and water, add the melted and cooled butter and finally the cocoa and gingerbread spice. Mix thoroughly until the dough is smooth. Set aside for half an hour. Fry the pancakes without any fat. Pour a ladleful of batter into a hot frying pan. Fry on both sides for around a minute.
Mix the cheese with the plum jam. Whip the cream until stiff with icing sugar. Cut the fruit into small pieces.
Brush the pancakes with cheese, roll into a pocket, i.e. in half and then in half again, and place three at a time on a plate so that they form the shape of a Christmas tree. Make a chain with whipped cream and decorate with fruit.
