Gosia Cooks for Christmas: Gingerbread muffins with jam and chocolate ganache
Mini cupcakes are a great alternative to a Christmas cake. They taste delicious and can be served in a very effective way.
Just look at what a miracle Gosia has prepared for us:
INGREDIENTS:
PIE:
- 120 g of butter
- 2 eggs
- 150 ml of milk
- 2 tablespoons of plum jam
- 250 g of wheat flour
- 50 g hazelnut flour
- 150 g of sugar
- 20 g gingerbread spice
- 2 tablespoons of cocoa
- 1 1/2 teaspoons baking powder
GANASH (CREAM):
- 300 ml of cream 30%
- 2 bars of dark chocolate 64% cocoa (200 g)
- 1 bar of milk chocolate (100 g)
- 100 g of butter
ADDITIONALLY:
- 200 g plum jam
- Christmas chocolate and sugar decorations
Tips:
- Melt the butter and let it cool down.
- In a large bowl, beat the eggs with sugar. Add jam, milk and cooled down melted butter.
We mix everything up.
Add dry ingredients to the wet ingredients: wheat flour, nut flour, gingerbread spice, cocoa and baking powder. We mix everything thoroughly.
- Line the muffin tray with paper molds. We put the finished mass with a spoon to 3/4
the height of the molds.
Bake the muffins for about 20 minutes at 180 ° C. Leave the baked items to cool.
- We prepare the ganash.
Place the cream in a saucepan and bring to the boil. We add the crushed chocolate and stir until it dissolves. Take the saucepan from the heat, then add the soft butter and stir until all the ingredients combine.
We put the ganash aside to cool and thicken.
- Fill the cooled down muffins with plum jam using a confectionery bag with a long, thin tip.
Then put the ganache in the sleeve with the decorating tip and decorate the top of the cupcakes.
Additionally, you can decorate the chocolate mass with sugar and chocolate decorations.
