Gosia Cooks for Christmas: Gingerbread Cheesecake
Cheesecake and gingerbread – sounds like a dream combination of flavors for Christmas! Here is a recipe that will conquer the hearts and palates of your guests – gingerbread cheesecake. You must try baking it this Christmas.
INGREDIENTS:
Gingerbread base:
- 300 g gingerbread
- about 70 g of butter (melted)
Gingerbread cheesecake:
- 1 kg of cottage cheese from a bucket
- 5 eggs (size L)
- 200 g of sugar
- 2 teaspoons gingerbread spices
- peel of 1 orange
- 2 tbsp flour (wheat or potato starch)
- 150 g of natural yogurt
- 1 sugar-free cream pudding
Chocolate glaze:
- 150 g of chocolate (I used 100 g of dark 50% cocoa and 50 g of milk)
- 70 ml 36% cream
Tips:
Mix the gingerbread cookies finely (you can also put them in a thick bag and break them with a rolling pin), add the melted butter and mix. Line the bottom of a springform pan lined with baking paper with cookies.
Put the cottage cheese, eggs, sugar, flour, pudding powder, yoghurt, gingerbread spice and orange peel into the mixing bowl. Mix everything until a homogeneous mass is obtained. We put the cheese on the gingerbread baking soda.
Bake the cheesecake for about 90 minutes in an oven preheated to 150°C. After baking, leave the cheesecake in the oven until it cools down – about an hour. Then put it in the fridge, preferably overnight.
Finely chop the chocolate, put it in a bowl and pour the hot cream over it. Stir until the chocolate melts completely. Brush the top of the cheesecake with the icing and decorate.
Notes
I use a 24 cm cake tin.
