Gosia Cooks: Cake with courgettes, nuts and cranberries
INGREDIENTS:
- 2 eggs L
- 130 ml rapeseed oil
- 130 ml milk
- 130 g cane sugar
- 300 g wheat flour
- 1/2 teaspoon cinnamon
- a pinch each of ground cloves, ginger and cardamom
- 1 teaspoon cocoa
- 1/2 teaspoon soda
- 1 teaspoon baking powder
- 1 courgette (approx. 250 g)
- 100 g chopped walnuts
- 100 g dried cranberries
- icing sugar for sprinkling
Tips
Crack the eggs into a bowl, add the oil and sugar and beat with a mixer. Then add the milk, flour, spices, baking powder, baking soda, cocoa to the egg mixture and continue mixing with a mixer until the ingredients are combined (if the batter is very thick add more milk).
Then add the grated courgettes (drain the juice before adding), walnuts and cranberries. Spoon in everything until the nuts are evenly distributed in the dough. Transfer the dough into an oblong tin, lined with baking paper.
Place the cake in an oven preheated to 180°C for about 60 minutes. Bake until a “dry stick”. Leave to cool. Sprinkle with icing sugar before serving.
