A school lunch box. Gosia Gotuje: Spinach waffles with an omelette and ham.

We will make your return to school more enjoyable! Here is an idea for the school Lunch box 🎒, new recipes from the Gosia Gotuje series! 👩‍🍳 4 super tasty lunch boxes 🥪 that will be great for kids going to school 🖋. One of them below:

INGREDIENTS:

Ingredients for waffles:

1/2 cup canola oil
1 1/3 cup of milk
2 eggs
1 1/2 cups of plain flour
1 1/2 teaspoons baking powder
4 tbsp blended spinach (I used frozen)
1 teaspoon of garlic spice

Ingredients for an omelette:

4 eggs
50 ml of milk
1/2 tablespoon of butter
salt pepper

Additionally: ham, cream cheese, green cucumber, and lettuce

Level: Easy

Preparation time: 30 min

Servings: 4

Tips:

Place all ingredients for the dough in a bowl and mix until the ingredients combine and obtain a smooth, uniform dough. We heat up the waffle iron and spread the dough thoroughly over the entire surface of the plates. After baking, put the waffles on a metal grid.

Put the eggs into a bowl, add milk, a pinch of salt and pepper, mix everything with a fork. In a medium frying pan, melt the butter, pour in the egg and fry, covered. After 2 minutes, turn the omelette over and fry until golden brown. Put on a plate and cut into four parts.

The only thing left for us to do is put everything together. Smear the first waffle with cheese, put slices of ham, omelette, green cucumber and lettuce, cover with the second waffle, creating a “sandwich”.

Note:

The baking time of the waffles depends on the type of waffle iron and its power, it should be adjusted accordingly.
